One Bowl Decadent Fudgy Chocolate Brownie



Did someone say BROWNIE? Wait? Chocolate Brownie! Sign me UPPPP!

So my relationship with chocolate brownies has been a rocky one. People have different variations of a perfect brownie and if your variation is a fudgy brownie with a crackly top - then hello best friend, you have come to the right place!!


Some brownies that I have had are just out of this world horrible, they have either just been cake, rock hard, under cooked, overcooked or just "What is this?" with no idea what I was eating. However, some brownies I have had has been amazing! Crackly top and fudgy insides - I mean that is what I prefer and think of, when I think B.R.O.W.N.I.E. Period.


COVID-19 got nothing on me, this brownie testing made me thick HAHA.

This is one of those one bowl recipes! Easy to make! Use a microwave-safe glass bowl to do all the melting and mixing. This recipe is so easy to put together and ready in under an hour! These brownies are fudgy, with a crackled top, rich, and super chocolate, and with just a few basic ingredients, you will have a batch of brownies that you can whip up any-time, even with those unexpected friends dropping by with an hour notice!





The three cardinal rules - Do not over mix, Do not over bake and cool before cutting

Saying that, if you really want some gooey heaven with some ice-cream, just scoop the brownie out the moment you pull it out of the oven!


Fudgy Chocolate Brownie

Afternoon tea or for a quick dessert after dinner!


Prep time : 10 mins

Cooking time 35-45 mins


Ingredients


140 gms dark chocolate, roughly chopped (use your favourite)

160 gms lightly salted butter

3 eggs, right out of the fridge is fine!

45 gms dutch cocoa powder

300 gms sugar

110 gms plain flour

100 gms of roasted macadamia and hazelnuts


Method


  1. Preheat oven to 175c fan-forced. Line a 20cm tin and set aside.

  2. Crush nuts using a mortar and pestle or in a food processor - make sure to only pulse it a few times.

  3. In a ceramic or microwavable bowl melt the chocolate and butter. Do it in intervals of 30 seconds, mix it with a spoon till you have all the butter and chocolate combined.

  4. Cool for a few mins and add the 3 eggs and mix well.

  5. Add all the remaining ingredients and mix till it is just combined.

  6. Pour into the tin and bake for 35-45 mins. 40 minutes is perfect for a fudgy texture (check notes)

  7. Once the 40 mins is up, turn the oven off and and cool completely with oven door closed.


Notes:


  1. Use a combination of nuts or fruits like raspberries or strawberries.

  2. This is not a cakey brownie. Cakey brownies require more flour. This brownie recipe is meant to be fudgy.

  3. For extra fudgy brownies, turn off oven at 35 mins and cool completely with oven door closed.

  4. If you do not have lightly salted butter, add unsalted butter and add 1/4 tsp of salt.

  5. Cut only after cooling down.
